Tofu and Oyster Soup
Fresh oysters and blanched tofu cubes simmered in a stock made from the clarified oyster soaking water, seasoned with soy sauce and a hint of five-spice.
Instructions
- 1

Rinse the oysters with water, making sure to clean off any remaining shells and sand.
- 2

Set aside the filtered water after it settles.
- 3

Cut the tofu into pieces.
- 4

Blanch the tofu cubes, and add salt to the water.
- 5

Heat oil in a wok, sauté the scallions until fragrant, and add a little five-spice powder.
- 6

Pour in the settled oyster water slowly, making sure not to pour in the sediment at the bottom of the bowl. If there isn’t enough soup, add water to make up the difference.
- 7

Add a spoonful of light soy sauce and a small spoonful of salt.
- 8

Add the tofu cubes once it boils.
- 9

Cook the tofu pieces a little longer, and after about ten minutes, add the oysters.
- 10

Turn off the heat as soon as the soup starts to bubble slightly; the residual heat is enough to cook it thoroughly. Do not cook the oysters for too long.
- 11

Sprinkle some scallion leaves, and it's done.
