Tomato and Fatty Beef Rice Noodles
Rice noodles in a bright, tangy tomato broth loaded with fatty beef, silky egg-crepe strips, ham, mushrooms and greens for a hearty, sour-savory bowl.
Instructions
- 1

Soak the Yunnan dried rice noodles overnight in advance (the instructions indicate that they need to be soaked for 8-10 hours in advance).
- 2

Peel the tomatoes and cut them into pieces.
- 3

Dice the onion (refrigerating it in advance can reduce the irritation to your eyes).
- 4

Shredded omelet pancake (this is the highlight, much tastier than shredded tofu skin 😄~), shredded ham, shredded baby cabbage, enoki mushrooms (not easy to absorb flavor, it is recommended to replace with oyster mushrooms for better taste).
- 5

Blanch the beef slices in boiling water.
- 6

Heat oil in a pan, add onions and tomatoes, stir-fry with salt until they release juice, then add an appropriate amount of salt and light soy sauce according to personal taste. Next, add broth or water and bring to a boil, then add rice noodles, shredded egg, shredded ham, shredded baby cabbage, oyster mushrooms, and other vegetables you like in sequence.
- 7

After cooking, serve it into a bowl, add slices of fatty beef, tomato slices, sprinkle with chopped green onions for garnish, it smells so good ✌~
