Tomato Enoki Mushroom and Fatty Beef Soup
A comforting hot-pot-style soup with tangy tomato broth, tender enoki mushrooms, and paper-thin fatty beef slices cooked just until juicy and meltingly soft.
Instructions
- 1
Wash the tomatoes clean, soak the enoki mushrooms in cold water for 10 minutes, take the beef rolls out of the refrigerator to let them cool down, and wash a few stalks of green onions clean;
- 2
Cut the tomatoes into small pieces; the skin can be removed or left on. If you really can't stand it, you can score a cross on the top of the tomatoes and boil them in boiling water for 30 seconds, which makes peeling easy. Divide the enoki mushrooms into small clusters. Finely chop the green onions; using spring onions will result in better appearance and aroma.
- 3
Boil water in a pot, and blanch the enoki mushrooms in the boiling water until they become soft; fresh enoki mushrooms contain colchicine, which can easily oxidize into toxic dioscorine when consumed, strongly irritating the gastrointestinal and respiratory mucosa, causing adverse reactions such as nausea, dry throat, and sore throat; soaking in cold water and blanching can remove colchicine and also eliminate the oxalate contained in them.
- 4
Briefly blanch the fatty beef in hot water and remove it once it changes color; if the fatty beef rolls are still frozen, use boiling water and cook in small amounts several times to maintain the tenderness of the beef; fatty beef contains a lot of blood and impurities, so blanching can remove these and also reduce some purines; normally we don't drink the soup when eating hotpot, but today we will, so blanching is healthier.
- 5
In another pan, pour a little oil and stir-fry the tomatoes until they release their juice; eating cooked tomatoes can fully release lycopene, which can help prevent prostate diseases in men; the vitamin C in tomatoes will not be significantly lost because the acidity helps protect it; at the same time, the tangy taste and bright red appearance of tomatoes can also stimulate appetite, making it enjoyable for both adults and children to eat.
- 6
Add an appropriate amount of hot water to the tomatoes and bring to a boil;
- 7
Put enoki mushrooms into the tomato soup;
- 8
Then add the blanched fatty beef slices into the soup, season with some salt according to your taste, and sprinkle with chopped green onions. The red with touches of green is very beautiful.
