Tomato Nutritional Soup
Tomato strips, blanched enoki mushrooms and leftover cracklings simmered together in a ginger-scallion broth for a tangy, hearty soup with rustic texture.
Instructions
- 1

Cut the scallions and ginger into sections.
- 2

Cut the tomatoes into strips, easy to add to the soup.
- 3

Bring a portion of enoki mushrooms and blanch them briefly in hot water. Didn't manage to take a photo. Can provide one if needed.
- 4

You can also leave a bit more, personally I like it cut a bit longer. Several times, the elders said it was a waste. In the past, leaving it like this was considered a sin. It was cut because of that.
- 5

The previous oil residue, put it in the fridge.
- 6

This is for two portions. One portion is for next time, put it in the fridge, try to eat it fresh, buy it fresh. This one I used the next morning, so I bought a bit more.
- 7

Heat the pan, add corn oil, add the fried oil bits, tofu puffs, enoki mushrooms, and tomatoes, stir-fry and add some salt and light soy sauce.
- 8

Heat the water, then heat for about 20 more minutes, and remove from the pot. This is a finished product photo taken during eating; I forgot to take a picture of how delicious it was.
