Traditional Side Dish — Salty Rambled Chinese Toon

Shade-dried toon leaves are rubbed hard with plenty of salt until limp and reduced, then pressed tight and stored for ten days, an old-fashioned, intensely salty side.

Instructions

  1. 1

    Wash the Chinese toon thoroughly.

  2. 2
    Step image

Place in a cool, shaded area to air dry completely, making sure there is no moisture.

  3. 3
    Step image

Pick off the old stalks and the parts that cannot be eaten.

  4. 4
    Step image

Sprinkle salt, add more salt, otherwise it will spoil easily.

  5. 5
    Step image

Then use your hands to knead it hard, squeezing out the moisture.

  6. 6
    Step image

After kneading it well, there was very little left from a pound of Chinese toon.

  7. 7
    Step image

Put it in a small bowl, press it down firmly, then cover it with a plastic wrap and seal the opening tightly. It can be eaten after ten days.
