Tui Tui Le

Tui Tui Le

Tui Tui Le: low-gluten flour, egg yolk and white sugar in a few quick steps, baked until golden and fragrant. Simple ingredients, satisfying homemade flavor.

Instructions

  1. 1
    Step image

Pour 5 egg yolks into a bowl and use a hand whisk to break them up in a Z-shaped motion.

  2. 2
    Step image

Add 30 grams of white sugar and stir evenly.

  3. 3
    Step image

Add 50 grams of salad oil and 50 grams of milk, and continue to mix evenly.

  4. 4
    Step image

Sift the low-gluten flour and add it to the egg yolks, mixing evenly. Then add 1 gram of vanilla extract and 1 gram of baking powder, mix evenly again, and set aside (I'm lazy, so I used regular flour that I normally use for making steamed buns, and I didn't sift it either, 😁).

  5. 5
    Step image

Beat the egg whites until they form fish-eye bubbles, then add one-third of 50 grams of sugar and quickly beat until streaks appear. As shown in the picture, add the remaining sugar and continue to beat.

  6. 6
    Step image

Continue whisking until you pick up the mixer, and there should be a small hook.

  7. 7
    Step image

Preheat the oven, set the top heat to 160 degrees and the bottom heat to 180 degrees. Then pour one-third of the whipped egg whites into the egg yolk mixture and fold it evenly with a spatula.

  8. 8
    Step image

Then pour the remaining whipped egg whites into the mixed egg yolk mixture, and continue folding with a spatula until evenly combined.

  9. 9
    Step image

As shown in the picture, just mix evenly. Pour slowly onto a baking tray lined with parchment paper from 20 cm above, spreading it to a thickness of 5 mm, using about half of the batter. Put it in an oven with the top heat at 160°C and bottom heat at 180°C, and bake for about 8 minutes, then take it out.

  10. 10
    Step image

Pour the remaining batter into some cocoa powder, mix thoroughly, pour into the removed baking pan, and put it in the oven to bake, with the same time as above.

  11. 11
    Step image

As shown in the picture, take out the cake and turn it over onto a piece of parchment paper to cool.

  12. 12
    Step image

Take out the light cream, shake well, and pour out an appropriate amount.

  13. 13
    Step image

    Whip with a hand mixer.

  14. 14
    Step image

Take Popping Candy, cut a circle out of a chilled cake, and place the Popping Candy inside.

  15. 15
    Step image

Layered cake, a layer of cream, stacked layer by layer, and you get a push-push cake. You can decorate the push-push cake with various toppings. I don’t have all the ingredients at home, so I’ll just use whatever I have 😁
