Two-Tone Cranberry Cheesecake Bagel

Two-Tone Cranberry Cheesecake Bagel

Easy and satisfying, Two-Tone Cranberry Cheesecake Bagel uses high-gluten flour, sugar and salt and is baked until light, fluffy and golden. A great choice for family gatherings or a weekend treat.

Instructions

Weigh all the ingredients. Set aside the red velvet liquid, as it will be used later to adjust to a deep pink color. When the mixture is about 70% mixed, add the butter. For bagels, aiming for a chewy texture, you don't need to beat it to full gluten development.

  2. 2

After being fermented, take it out, the total weight is 2000g. Take 1000g and put it into the UKOEOU10 dough mixer, add 3 drops of edible red velvet, and mix until a deep pink color forms, creating a color difference. It's roughly just a more noticeable color difference, and the effect is very beautiful after baking.

  3. 3
    Step image

After resting for 20 minutes, divide into 40g small dough balls, shape into rounds, cover with oiled cloth at room temperature to prevent drying, rest for another 20 minutes, then wrap with filling.

  4. 4
    Step image

The bottoms of the two colored doughs stick together, pat them flat and roll them out with a rolling pin to remove air. Shape into a trapezoid, roll the filling from top to bottom and seal the closure.

  5. 5
    Step image

Cylinder-shaped, cut a one-centimeter slit at one end with scissors, flatten the rolling pin and wrap it around the other end of the cylinder. Tighten the slit.

After being properly wrapped, place it with the seam side down, ready to go into the fermentation box to ferment until it doubles in size. Temperature 28°C, humidity 70%, for about 40 minutes.

  7. 7
    Step image

Prepare the bagel water: 50g of sugar and 1000ml of water, bring to a boil, and have a rack ready for draining. Once the water is boiling, put in the bagels and boil each side for 15 seconds, remembering to flip them. The longer you boil, the firmer the texture; if you like a firmer texture, you can extend the time.

  8. 8
    Step image

This is the bagel dough after boiling; the surface is wrinkled, and it will be very plump after baking.

  9. 9
    Step image

Bake the Kobe-style 80s furnace with 3 layers at the same temperature of 155°C for 12 minutes.

  10. 10
    Step image

Melt dark chocolate in advance to draw the eyes, nose, and mouth. You can also use the leftover dough with a round piping tip to press out more three-dimensional facial features. Spray the surface with water and then stick them on.

    Step image

This is a two-tone bagel with more defined facial features; if you find it troublesome, this step can be skipped.
