Instructions

The heart section was chosen to use Genoise because it is relatively dense and less prone to deformation. Eggs and granulated sugar were mixed evenly, then placed in the stand mixer at high speed for 3 minutes, reduced to medium speed for 3 minutes, and then to low speed for 3 minutes, organizing the bubbles in the batter.

Add red velvet essence, mix evenly, and the amount can be adjusted according to personal preference.

  3. 3
    Step image

Sift in the low-gluten flour and mix evenly, then add the melted butter, mix well, and pour it into a baking pan lined with parchment paper, spreading it evenly.

  4. 4
    Step image

Bake with the Midea Encounter oven PT3530W at 150 degrees for 20 minutes. Because we are making a filling, bake it a bit longer to prevent it from being too soft when shaping. This Midea Encounter oven has a preheating function, so remember to press the preheat button and wait until you hear the prompt sound before placing the baking tray in the oven to bake.

  5. 5
    Step image

Remove the parchment paper from the freshly baked item, let it sit for a while, and then use a heart-shaped cookie cutter to press out heart shapes and set aside.

    Step image

Condensed milk paper cup: Heat the corn oil in the microwave to about 80 degrees, then pour it into the low-gluten flour and mix evenly.

  7. 7
    Step image

After adding 1 whole egg and 3 egg yolks and mixing evenly, add the condensed milk and mix well.

  8. 8
    Step image

Add the egg whites in three parts to the granulated sugar and beat until they form soft peaks, then fold the egg whites in three parts into the egg yolk batter until well combined.

  9. 9
    Step image

Squeeze the batter into the paper cups and place the heart-shaped cake piece in the middle of the cake.

  10. 10
    Step image

Also using the Midea Encounter Oven, this time we bake at 120 degrees for 45 minutes first, then switch to 150 degrees for 8-10 minutes. Although this oven is only 35 liters, it has a high success rate for baking chiffon cakes. The temperature control and heat retention are very accurate, and the coloring is even.

  11. 11
    Step image

Whip the light cream with white sugar until it shows ridges, then add cocoa powder and chilled chocolate dry ganache and continue whipping. Decorate on top of the cupcakes, covering the heart shape. Before decorating, mark the position of the heart-shaped cake piece for easy cutting!
