Wanzhou Lotus Root Balls
Wanzhou's specialty: grated lotus root folded with ginger-scented minced pork, packed into oiled bowls, and steamed until the starch turns sticky and glossy - savory-sweet with a delicate crunch.
Instructions
- 1

Soak the rice in cold water overnight in advance; if there's not enough time, just soak it in hot water until soft.
- 2

Grind the lotus root into a paste.
- 3

It's been sharpened.
- 4

Grind a small amount of pork belly and ginger into a paste (lean meat can also be used; I tried it, and it's best to grind the ginger together when grating lotus root for a finer texture).
- 5

After mincing the meat, put it into the lotus root paste and add one and a half tablespoons of chicken bouillon.
- 6

Add a spoonful of salt, then mix it evenly.
- 7

Wipe a clay bowl dry and rub a little cooking oil on it (I use sesame oil for a nicer aroma) to coat it evenly. This prevents it from sticking to the bowl when inverted.
- 8

Put the mixed lotus root paste and minced meat into a bowl.
- 9

Drain the yin rice and pour it on (do not press).
- 10

Bring the water to a boil and steam in the pot for 1.5 hours.
- 11

After steaming, just place a plate over it, sprinkle with chopped green onions, and it's done.
