Warm and Nourishing Lamb Soup
Blanched lamb chunks slow-simmered two hours with ginger, red dates, and Chinese herbs, then finished with yam for a warming, peppery-sweet winter tonic broth.
Instructions
- 1

Prepare the raw materials and clean them thoroughly: cut the mutton into pieces, peel and cut the Chinese yam into sections, slice the ginger, and remove the pits from the red dates.
- 2

Add water, ginger slices, and cooking wine to the pot and bring to a boil. Add the lamb to blanch for about 3 minutes, then remove, rinse clean, and transfer to a clay pot. Add all the medicinal herbs, pour in water, bring to a boil over high heat, then reduce to low heat and simmer for two hours.
- 3

Pour in the Chinese yam and cook for half an hour, add salt to taste, and turn off the heat.
- 4

Start.
