Water Chestnut Cake
Cantonese-style translucent jelly cake made from water chestnut flour slurry and dark slab sugar syrup, studded with crunchy fresh water chestnut pieces for a refreshingly springy, sweet bite.
Instructions
- 1

Peel and chop the water chestnuts, but don't chop them too finely; having some texture will make it taste better.
- 2

Prepare 250 grams of horse hoof powder.
- 3

Add water and water chestnut flour and mix well, then pass the prepared batter through a sieve once to remove large particles and impurities.
- 4

Put the red sugar slices in the pot.
- 5

Add 500 milliliters of water and bring to a boil.
- 6

Pour the horse hooves into the boiling red sugar syrup and cook for a while.
- 7

Scoop two spoons of white powder paste and pour it into the water chestnut brown sugar syrup, then stir evenly; slowly, it will reach a thin paste consistency.
- 8

It's roughly like this.
- 9

Pour the brown sugar slurry into the remaining white powder slurry again.
- 10

Quickly mix thoroughly.
- 11

Then pour it all into a container and steam it for 25 minutes.
- 12

Let it cool overnight, remove the mold, and cut it into pieces. Fry it briefly in an oil pan, or steam it in the morning to eat as breakfast.
