Waterless No-Knead Soft Toast
Waterless No-Knead Soft Toast brings high-gluten flour, wheat germ and milk powder together and is baked until golden and fragrant. Perfect with tea or as a snack.
Instructions
- 1
First make the milk roux: add 25g of high-gluten flour to 150g of milk. Heat in a pot, stirring constantly during the process.
- 2
Just thicken.
- 3
Transfer and place in the refrigerator to chill for more than two hours.
- 4
Take out the tangzhong and add it to the flour, milk powder, eggs, and sugar.
- 5
Mix evenly. The dough is very wet; do not add more flour. Just mix it with a spatula.
- 6
Add an appropriate amount of corn oil in batches.
- 7
I added about 15g of corn oil. I covered the batter and put it in the fridge to chill for eight hours; I left it overnight.
- 8
The next day, take it out and add the broth yeast.
- 9
Mix evenly with chopsticks. Cover and let it ferment.
- 10
The fermentation is done.
- 11
Sprinkle some dry flour on the board and directly pour out the batter.
- 12
Use a spatula to pick up some dry flour and mix a few times.
- 13
roll flat
- 14
Fold the quilt.
- 15
Fold several more times
- 16
Divide into three parts
- 17
Roll each into a thin sheet
- 18
Roll it up
- 19
Place in the mold (450g), cover with a lid, and ferment.
- 20
Ferment until doubled in size, then brush with egg wash.
- 21
Sprinkle sesame seeds. Preheat the oven to 200°C for 10 minutes. Bake at 180°C for 40 minutes.
- 22
Ding! Fresh out of the oven!
