West Lake Beef Soup
A classic Hangzhou soup of finely minced beef, tofu, and shiitake simmered with ginger and thickened with starch, topped with cilantro and scallion.
Instructions
- 1

Main ingredients needed ~ beef, tofu, and fresh shiitake mushrooms.
- 2

Wash the beef and chop it finely (the finer, the better).
- 3

Clean and dice the tofu and shiitake mushrooms, and also chop the cilantro and green onions.
- 4

Add a spoon of starch and two spoons of water to the beef and mix evenly.
- 5

The mixed beef can be slightly watery.
- 6

Add 710 grams of water to the pot.
- 7

Add diced tofu, shiitake mushrooms, and ginger slices.
- 8

Cover and bring to a boil.
- 9

Open the lid and add the beef, cover tightly and bring to a boil again (gradually add, using a spatula to break up the beef).
- 10

After it comes to a boil, open the lid and add an appropriate amount of pepper and salt.
- 11

Mix the remaining spoonful of starch with a little water and add it to thicken the sauce.
- 12

Use chopsticks to beat the egg white.
- 13

Then pour the beaten egg whites along the edge of the pan, use a spatula to break up the egg into flower-like shapes, then add chopped green onions and cilantro and turn off the heat.
- 14

Finished product ~ Drizzle a little sesame oil before eating.
