West Lake Beef Soup ---- Homemade Version

A classic Hangzhou soup of finely minced beef and mushrooms in a glossy, starch-thickened broth, finished with egg white and fresh cilantro.

Instructions

If you are using dried mushrooms, you need to soak them in advance. I am using fresh ones, so just cleaning them is enough.

  2. 2
    Step image

Chop it into fine mince, it requires a bit of patience.

  3. 3
    Step image

Fresh beef, buy it, clean it, and freeze it in the fridge. This is to make it easier to cut later.

  4. 4
    Step image

Same as above, chop into fine minced meat.

  5. 5
    Step image

Cilantro is essential, I love it so much.

  6. 6
    Step image

    Finely chop the ginger.

  7. 7
    Step image

Two eggs, only the egg whites.

  8. 8
    Step image

Add water to the pot and then add the chopped minced beef [Actually, before putting the beef in the pot, you can put it in a bowl and pour hot water over it. This can help break up the beef, otherwise, if you put it directly into the pot, it will clump together]. Remember to add a spoonful of cooking wine to remove the raw meat smell.

  9. 9
    Step image

After the water boils, drain it and rinse off the scum with warm water, then drain it again and set aside for later use.

  10. 10
    Step image

Take a cooking pot, add a little more water, bring it to a boil, then add ground beef and ginger to boil together. After the water comes back to a boil, cook for a little while longer.

  11. 11
    Step image

Add the chopped mushroom pieces and continue cooking.

  12. 12
    Step image

Add an appropriate amount of salt when it feels about right.

  13. 13
    Step image

    Season with white pepper powder.

  14. 14
    Step image

Pour in the water-starch mixture to thicken the sauce, and remember to pour it in two times. After the first addition, check the consistency; don't add too much, as if it's too thick it won't taste good.

  15. 15
    Step image

Slowly pour in the egg whites, remembering to stir quickly and evenly so that the egg whites become like flying flakes [so when pouring the egg whites, you must slowly pour in a circular motion, don't foolishly pour it all at once and then blame me later.

  16. 16
    Step image

Finally, sprinkle cilantro and drizzle sesame oil.

  17. 17
    Step image

Stir well and take it out of the pot. You can taste it often to see if anything needs to be added.

  18. 18
    Step image

A soup with an amazing taste, definitely a must-try when hosting guests at home.

  19. 19
    Step image

Go to the friends who make yourself happy, love those who will not make you cry, head in the direction you want to go, and achieve dreams big or small. Life should be beautiful and gentle.
