White Cut Pig Trotter
A whole trotter is bound, simmered gently with aromatics until the skin turns silky and the meat yielding. Sliced thick and served plain, it celebrates natural porkiness with minimal fuss.
Instructions
- 1

Prepared pig trotters (authentic ones are whole pig trotters, deboned). Since my family is small, I only bought half, which is a bit troublesome to handle.
- 2

Sprinkle an appropriate amount of salt on the pig's trotter.
- 3

Tie the pig's trotters with a rope and secure them with two chopsticks.
- 4

Soak the pig trotters in cold water, then add ginger, bay leaves, cooking wine, and salt.
- 5

Cook over medium heat for 45 minutes to an hour.
- 6

If you can pierce it with chopsticks, it indicates that it is fully cooked.
- 7

Take it out and place it in ice water to cool.
- 8

Roll it up in a plastic bag.
- 9

Place in the refrigerator and chill for two hours.
- 10

Prepare minced garlic and chili, drizzle with soy sauce, and pour hot oil over it.
- 11

Slice the pig's trotters and arrange them on a plate to serve.
- 12

Finished product.
