White Fungus and Lotus Seed Soup
A slow-simmered sweet soup where snow fungus and lotus seeds stew for hours into a thick, glossy, collagen-rich dessert dotted with red dates.
Instructions
- 1

Soak the white fungus until it expands, clean it, and tear it into small pieces.
- 2

Rinse a handful of lotus seeds lightly. It's okay if they still have the cores, as the cores are said to clear heat.
- 3

Put the lotus seeds and white fungus into a soup pot, add water, at least enough to cover the white fungus. Bring to a boil over high heat, then reduce to the lowest heat and simmer slowly.
- 4

Cook it until the end of time, it's been three hours, I really can't bear it anymore, add a few washed red dates, continue cooking, and eat it whenever you can't stand it anymore and feel like eating.
- 5

Remember to add rock sugar before turning off the heat.
- 6

The lotus seeds have completely softened, but the white fungus hasn't turned gelatinous yet. If you have time and patience, you can continue to simmer it, adding more water if it gets too little.
