White Fungus, Red Date, and Longan Soup
A sweet, gelatinous tonic soup of overnight-soaked white fungus, red dates and longan repeatedly simmered in a health pot until thick, then sweetened with rock sugar.
Instructions
- 1

Take 5 small pieces of dried white fungus, preferably the finer small pieces, and soak them in water overnight—just enough water to cover the dried white fungus—for 8-10 hours. After soaking, put the white fungus together with red dates and longan into a health pot to cook.

For the health-preserving pot, I choose the medicinal food setting which defaults to 40 minutes. I will manually add another 20 minutes to make it a total of 1 hour. After the first cooking is done, I will add rock sugar and repeat the process 2-3 times.

The cooked white fungus soup with red dates has a rich flavor, and the white fungus is soft and very delicious.
