White Fungus, Snow Pear, Lily Bulb, and Lotus Seed Soup
A restorative dessert soup of snow fungus, snow pear, lily bulb, and lotus seeds long-simmered until gelatinous and glossy, sweetened gently with red dates.
Instructions
- 1
Soak the dried white fungus for an hour in advance until fully expanded. Soak the dried lotus seeds overnight in advance, making them a bit soft before cooking.
- 2
Remove the pits from the red dates and cut them in half, wash the fresh lily bulbs and drain the water.
- 3
Cut the snow pear into small pieces, tear the white fungus into small pieces, then put them into a pot. Boil over high heat for 20 minutes, then simmer over low heat for another 20 minutes, until the white fungus releases its gelatin and becomes sticky and gooey.
- 4
Then put the red dates, goji berries, fresh lily bulbs, and rock sugar into the pot, stirring constantly. After about 5-10 minutes, it can be taken out of the pot.
