Whole Wheat Steamed Bun Exclusive
Pillowy steamed buns made with equal parts white and whole wheat flour, naturally leavened, twice-proofed, and steamed into soft, faintly nutty, healthful rounds.
Instructions
- 1
The flour and whole wheat flour are ready in a 1:1 ratio.
- 2
Warm the water, and mix the yeast and sugar evenly, then knead into a dough of medium softness and firmness.
- 3
Ferment until it doubles in size.
- 4
Add a little baking powder, knead evenly, degas for the second time, and let it rest for ten minutes.
- 5
Roll the portion into a strip, cut it into pieces of the same size, and knead them until smooth.
- 6
Place the prepared buns in the steamer basket in order, and let them rise again until they double in size.
- 7
After the water in the pot comes to a boil, steam for twenty-five minutes.
- 8
After the time is up, turn off the heat and let it sit covered for two to three minutes before opening the lid.
- 9
After cooling, if you can't eat it all at once, you can store it in the freezer.
