Winter Melon and Coix Seed Duck Soup
A classic Cantonese slow-boiled soup of skinless old duck, winter melon, coix seeds, and honeyed dates, long-simmered into a clean, hydrating broth that never tastes greasy.
Instructions
- 1

Clean the lotus seeds, Chinese yam, coix seeds, and jujubes. Remove the jujubes, and soak the others in advance.
- 2

Wash the winter melon clean, remove the seeds, no need to peel it, as the winter melon skin has obvious diuretic effects. The winter melon skin is also quite tasty after being cooked. Cut the winter melon into large pieces.
- 3

Remove the skin from the old duck, so the soup will not be too greasy when cooked, and cut it into large pieces.
- 4

After the water in the pot comes to a boil, put the duck meat in and blanch it briefly to remove the bloodiness and foam.
- 5

Add water to the clay pot, put in the duck meat, ginger slices, and honey dates. After the water boils, add the soaked lotus seeds, jujubes, and coix seeds to prevent sticking to the bottom.
- 6

Add the winter melon pieces, cover the pot, and simmer over medium-low heat for an hour and a half. Finally, add salt to taste.
