Winter Melon and Job's Tears Duck Soup
A classic Cantonese duck soup with winter melon and barley, soaked then slow-cooked with tangerine peel and ginger, the skin-on melon lending cooling freshness.
Instructions
- 1

Prepare the materials.
- 2

Rinse the coix seeds and soak them in water for 2 hours.
- 3

Put the duck meat and lean meat into cold water in a pot and blanch them.
- 4

After boiling, remove the duck pieces and lean meat, and rinse off the foam.
- 5

Cut the winter melon into large pieces; (leaving the skin on the winter melon helps cool the body).
- 6

Add enough water to the soup pot, put in the duck pieces and lean meat, bring to a boil, and skim off the foam.
- 7

Add the other ingredients—Job's tears, ginger slices, dried tangerine peel, and winter melon—into the pot, bring to a boil, then reduce to low heat and simmer for 1.5 hours.
- 8

Finally, add salt to taste, and the delicious soup is ready to drink~
