Winter Melon and Meatball Vermicelli Soup
A clear clay-pot soup with ginger-scented pork meatballs, tender winter melon slices, and slippery glass noodles, finished with dried shrimp for a whisper of briny sweetness.
Instructions
- 1

Prepare the necessary ingredients. Peel the winter melon and cut it into small pieces. Soak the vermicelli in cold water until soft.
- 2

Add water to the clay pot and bring it to a boil. Add an appropriate amount of shredded ginger and green onions, then add the meatballs and cook for three to four minutes. Frozen meatballs need to be cooked longer after thawing to be fully heated.
- 3

Then, add the winter melon, bring to a boil, and simmer for about 5 minutes. The time depends on the thickness of the winter melon.
- 4

Finally, add the dried shrimp and vermicelli, and after boiling, season with a little salt.
- 5

Add some goji berries, and it can be served. Since the meatballs are fried food, no oil needs to be added. This way, it won't be greasy and will be delicious and tasty.
