Winter Melon and Yam Soup
A light Cantonese soup simmering pork bones with barley, carrot, winter melon, and Chinese yam, producing a mild, refreshing broth prized for clearing heat and dampness.
Instructions
- 1

Soak coix seeds for 30 minutes.
- 2

Peel the carrot and cut it into small pieces.

- 5

Put the carrots, coix seeds, pork bones, and jujubes into a soup pot and cook for 30 minutes.
- 6

Add the winter melon and continue to bring to a boil, then turn to low heat and simmer for 1 hour.
- 7

Peel the yam and cut it into pieces.
- 8

Add the Chinese yam and continue to simmer for 30 minutes.
- 9

Skim off the oil and season with salt.
- 10

Clears heat and removes dampness, strengthens the spleen and nourishes the skin.
