Winter Melon Duck Frame Soup
A thrifty roasted-duck leftover soup: the duck frame simmers with unpeeled winter melon, infusing the clear broth with smoky, savory, naturally sweet depth.
Instructions
- 1

Remove the meat from the roast duck and keep the duck carcass.
- 2

Put about 800 milliliters of water into a pot, add the duck carcass (you can cut it into small pieces, I just put it directly into the pot), cover with a lid, and bring to a boil over high heat. Once the water boils, reduce to medium-low heat and simmer.
- 3

About 200 grams of fresh winter melon.
- 4

Wash the winter melon thoroughly and cut it into pieces. (When there are children at home, remove the skin and seeds of the winter melon.) For making soup, do not peel or remove the seeds, because the winter melon skin helps with diuresis and reducing swelling. It is used for edema, difficulty in urination, thirst from summer heat, and short red urine. The winter melon seeds have effects such as clearing heat and resolving phlegm, reducing abscesses and discharging pus, and promoting dampness elimination.
- 5

Put the winter melon into the pot, turn the heat to high and cook for 3 minutes, add a little salt, then switch to medium heat and simmer for 5-10 minutes.
- 6

Turn off the heat and pour into a soup bowl. It’s even better if you sprinkle some chopped cilantro on top~ (Unfortunately, the kids don’t eat cilantro).
