Wolf Tooth Potato
Sichuan street-style crinkle-cut potato fries fried until crisp-tender, then tossed with houttuynia herb, chili, scallion and cilantro for a spicy, tangy, addictive snack.
Instructions
- 1

Peel and wash the potatoes.
- 2

Cut into strips with a crinkle cutter.
- 3

Rinse several times with clear water to remove excess starch.
- 4

Soak in cold water for 30 minutes.
- 5

Take the young roots of the folded ear root and wash them clean.
- 6

Scallions and cilantro are cut into small pieces.
- 7

Cut the small chili peppers into short sections.
- 8

Cut the Houttuynia cordata into small sections.
- 9

Drain the water from the soaked potato strips.
- 10

Fry in 160-degree hot oil for 2 minutes. Be careful not to fry for too long, otherwise it will become soft.
- 11

They are separately placed in two large bowls, ready to make one spicy and one non-spicy.
- 12

Add fine salt, granulated sugar, Sichuan pepper powder, and cumin powder to both bowls, and add chili powder and small chili peppers to one of the bowls.
- 13

Pour the hot oil just used to fry the potatoes over it.
- 14

Then add the folded root, small scallions, and small sections of cilantro.
- 15

Drizzle with aromatic vinegar and mix well.
- 16

Divide into small paper bowls.
- 17

Eating it skewered with bamboo sticks tastes even better.
