Xiao Zhu Brand Specialty Pickles
A rustic cucumber pickle where overnight salting and a day in the sun give the strips a chewy bite, later mingled with soy, sugar, chili, ginger, and garlic.
Instructions
- 1

Wash the cucumber and let it dry, then cut it in half lengthwise, and slice it into small pieces like those shown in the picture.
- 2

Add an appropriate amount of salt and marinate overnight.
- 3

The next day, left under the sun all day, the cucumber strips were a bit wilted, but had some chewiness.
- 4

Prepare the ingredients: cut the chili into sections, slice the ginger, and slice the garlic.
- 5

Find a clean container, without water or oil, add two tablespoons of white sugar and an appropriate amount of soy sauce, put it on the fire and cook until the white sugar melts, then let it cool.
- 6

After letting the soy sauce mixture cool, add the sun-dried cucumbers and the chopped ingredients, mix evenly, and then you can put it in the refrigerator to chill. It can be eaten in about two to three days. The fragrance gradually emerges, the color is bright green, sweet with a hint of spiciness, absolutely simple, delicious, and also inexpensive.
