Yam and Oxtail Soup
A robust soup of blanched oxtail and yam simmered with whole spices tied in a tea strainer, yielding a clear, gelatinous, deeply savory broth.
Instructions
- 1

Prepare the ingredients. Wash the oxtail bones and set aside.
- 2

Put the oxtail bones into the soup pot, add enough water to cover the oxtail, and bring to a boil over high heat to blanch.
- 3

When water boils, there will be a lot of thick foam on the surface.
- 4

Discard the water used for blanching, and rinse the blanched oxtail bones with clean water to remove the blood scum.
- 5

Place the spices into a tea strainer, so after simmering, you can take it out directly. The broth is refreshing.
- 6

After cleaning the soup pot, put all the ingredients into the pot. Bring to a boil over high heat, then reduce to low heat and simmer for about 3 hours.
- 7

Peel and wash the Chinese yam.
- 8

Cut into roll-shaped pieces.
- 9

The simmered oxtail soup fills a large pot. Pour an appropriate amount into a small soup pot.
- 10

After boiling, add the yam pieces and bring to a boil again, then reduce to low heat and simmer for about 20 minutes.
- 11

Wash the goji berries and set them aside.
- 12

Season the simmered soup with salt and black pepper.
- 13

Add the goji berries and cook for a few more minutes.
- 14

The cooked soup is very delicious. You can chop some green garlic and sprinkle it into the soup.
