Yam and Pork Rib Soup
Blanched pork ribs pressure-cooked with Sichuan peppercorn, scallion, and ginger, then simmered with corn, carrot, and chunks of Chinese yam for a mildly sweet, hearty broth.
Instructions
- 1

Soak the spareribs in clean water to remove the blood.
- 2

Put water in the pot, add the ribs, add a few slices of ginger and cooking wine, and bring to a boil until the blood foam rises. Take out and rinse clean.
- 3

Put it into the electric pressure cooker, add Sichuan peppercorns, green onions, and ginger, and add an appropriate amount of water. Select the meat cooking button, cook until done, and let the pressure release naturally.
- 4

Prepare corn and carrots.
- 5

Cut the Chinese yam into large pieces and soak them in water to prevent discoloration.
- 6

Put the cooked ribs back into the pot, add all the ingredients, season with salt, and cook until done.
