[Yantai] Fresh Shrimp and Shredded Radish Soup
A coastal Shandong soup where whole shrimp are seared to release their roe-rich flavor, then simmered with silky radish shreds in chicken stock for a sweet, briny, aromatic broth.
Instructions
- 1

All the main ingredients are prepared.
- 2

Heat a cold pan with a spoonful of peanut oil, then add the shredded scallions and ginger to stir-fry.
- 3

Add dried red chili peppers and sea shrimp, gently press the shrimp heads with a spatula to squeeze out the shrimp paste. Stir-fry the sea shrimp until they change color, then remove and set aside.
- 4

After the shrimp are served, a bit of oil will remain in the pan. Add the radish cut into thin strips and stir-fry over medium heat.
- 5

Add the shrimp and chicken broth, then a little water. After it comes to a boil, reduce to medium heat and cook for six minutes.
- 6

Add a little soy sauce.
- 7

Add salt at the end, then remove from the heat.
- 8

The shredded radish itself is quite sweet, and after simmering for a few minutes, it soaks up the essence of the shrimp and chicken soup, making it incredibly delicious.
