Yogurt Zucchini Salad
Grated zucchini is sauteed until mellow, then folded into a garlicky strained-yogurt dressing and crowned with toasted walnuts. Creamy, herby and cool, it borrows a Mediterranean mood for light dining.
Instructions
- 1

Grate the zucchini into coarse shreds, and chop the dill and garlic.
- 2

Place two pieces of kitchen paper in a strainer, then pour in the yogurt and drain some of the water.
- 3

Chop the walnut kernels.
- 4

Pour a spoonful of olive oil into the pan, then add zucchini and stir-fry over low heat.
- 5

Season with salt, stir-fry until the water evaporates and the zucchini becomes soft. Turn off the heat and let it cool.
- 6

Pour the yogurt into a mixing bowl, add minced garlic, dill, and salt, and mix well.
- 7

Add olive oil and butter to the pot and melt, then add the walnuts and fry over low heat until cooked. Add chili powder, stir a few times, and then remove from the pot.
- 8

Spread yogurt on the bottom of the pan, add zucchini, and finally sprinkle some walnuts and chili oil on top.
