Zebra-Patterned Milk-Flavored Steamed Bun
Soft milk-enriched steamed buns twisted from plain and black-sesame doughs into striking zebra stripes, offering a pillowy, gently sweet crumb with toasty, nutty undertones.
Instructions
- 1
Put the dry yeast, fine sugar, and milk into a bowl, and stir a few times with chopsticks so that the yeast can dissolve in the milk;
- 2
Pour in the flour, usually all-purpose flour is used, but you can also use cake flour;
- 3
Stir into a clump with chopsticks;
- 4
Separate 1/4 of the dough and add 10 grams of black sesame paste; temporarily set aside the main dough, covering it with a kneading bowl to prevent water from evaporating.
- 5
Add a little flour, knead the black sesame paste thoroughly into the dough until it forms a smoother, soft dough, set it aside for the time being, and cover it with a bowl;
- 6
Knead the all-purpose flour dough into a softer, smooth dough.
- 7
Sprinkle a small amount of flour on the cutting board (extra amount), roll the white dough into a rectangular sheet, about 2 millimeters thick;
- 8
Roll the black sesame dough into a rectangular sheet about 1 millimeter thick, and use a scraper to cut it into even noodles about 5 millimeters wide.
- 9
Spray a little mist of water on the white dough sheet with a spray bottle, lay the black noodles neatly in a diagonal direction, and if they are not long enough, you can join one piece; cut off the excess noodles at the edges; gently roll along the line direction with a rolling pin a few times to make the noodles flat.
- 10
Pick up the dough piece, quickly flip it over with the striped side facing down; roll it from top to bottom into a roll, then round it off.
- 11
Use a sharp knife to saw the dough roll into even sections, and re-knead the scraps into a ball, kneading them into a marble pattern.
- 12
Line the steamer basket with parchment paper, place the raw buns on the parchment paper in a staggered arrangement, leaving space between each one;
- 13
Place them in the steamer to naturally ferment until they are 1.5-2 times larger; if they are too close to each other due to expansion, you can put a sheet of parchment paper between the two raw dough pieces, so they won't stick together;
- 14

Steam over high heat for 12-15 minutes, then turn off the heat and let it sit for 3 minutes before serving.
